01 - Place the peach slices in a medium mixing bowl and drizzle with 1 tablespoon of honey or maple syrup. Toss gently to coat and let rest for about 2 minutes so the fruit absorbs the sweetener.
02 - Spoon approximately 2 tablespoons of Greek yogurt into the bottom of each parfait glass or serving bowl, spreading it into an even layer.
