Sweet Chilli Turkey Noodle Stir Fry (Printable Version)

Tender turkey and crisp vegetables with noodles in tangy-sweet chili sauce. Ready in 35 minutes.

# What You Need:

→ Proteins

01 - 14 oz turkey breast, thinly sliced

→ Vegetables

02 - 1 red bell pepper, thinly sliced
03 - 1 yellow bell pepper, thinly sliced
04 - 2 medium carrots, julienned
05 - 1 small red onion, thinly sliced
06 - 3.5 oz sugar snap peas, halved
07 - 2 spring onions, sliced, plus extra for garnish
08 - 2 cloves garlic, minced
09 - 1 tbsp fresh ginger, grated

→ Noodles

10 - 9 oz egg noodles (rice noodles for gluten-free option)

→ Sauce

11 - 4 tbsp sweet chili sauce
12 - 2 tbsp soy sauce (tamari for gluten-free)
13 - 1 tbsp rice vinegar
14 - 1 tbsp sesame oil
15 - 1 tsp cornstarch (optional, for thickening)
16 - 1/2 tsp crushed red pepper flakes (optional)

→ Garnish

17 - 1 tbsp toasted sesame seeds
18 - Fresh coriander leaves (optional)

# Method:

01 - Cook egg noodles according to package directions until al dente. Drain thoroughly, rinse under cold water to stop cooking and prevent sticking. Set aside for stir-frying.
02 - Whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, and cornstarch in a small bowl until smooth and combined. Reserve for adding during final cooking stage.
03 - Heat large wok or deep skillet over medium-high heat. Add oil swirl, then add turkey slices in single layer. Stir fry 3-4 minutes until just cooked through and lightly browned. Remove from wok and set aside.
04 - Add additional oil to hot wok. Add minced garlic, grated ginger, and sliced red onion. Stir fry 1 minute until fragrant and onion begins to soften.
05 - Add bell peppers, julienned carrots, and sugar snap peas to wok. Stir fry 3-4 minutes until vegetables are crisp-tender and brightly colored.
06 - Return cooked turkey to wok. Add prepared noodles and pour sauce mixture over all. Toss continuously 2-3 minutes until everything is well coated and heated through.
07 - Stir in spring onions and crushed red pepper flakes if using. Remove from heat immediately. Serve hot, garnished generously with toasted sesame seeds and fresh coriander leaves.
